Kofta Ingredients
- 500g lamb mince
- ½ red onion, finely diced
- 2-3 tbsp fresh mint, finely chopped (plus extra to serve)
- 1 large clove garlic, crushed
- 1/3 cup breadcrumbs
- 2 tsp ground cumin
- 1 tsp paprika
- 2 tsp ground coriander
- 1 tsp salt
- A dash of black pepper
To Serve
- 4 small pita breads
- tzatziki (store bought is just fine)
- 1 small pkt mixed lettuce leaves
- ½ red onion, sliced thinly
- extra chopped mint
- lemon wedges
Method
Place all lamb kofta ingredients in a bowl and mix well to combine. Shape and press the mixture onto 8 skewers. We used metal skewers and lightly oiled them before use.
Add a little oil to your Equip pan and cook for approx. 8-10 minutes, turning as you go, ensuring all sides are nicely browned and the lamb is cooked to your liking. Remove from pan and set aside to rest for a few minutes.
While your Koftas are resting, heat your pitas in a pan on low heat for a minute or two on each side. Place in foil to keep warm while the others are heating.
To serve, place a little lettuce and red onion on each pita, top with 2 koftas each, a good drizzle of tzatziki, a squeeze of fresh lemon juice and a sprinkling of extra fresh mint.
(Make sure you remove your skewers before eating.)
