Serves: 4 | Prep Time: 20 minutes | Cook Time: 15-20 minutes
Salad Ingredients
- 4 medium firm peaches, sliced into wedges
- 1 cup fresh cherries, halved & pitted
- 2 tbsp extra virgin olive oil
- Salt & pepper to taste
- 220g tub of Bocconcini Balls
- ¼ cup toasted pistachios (pine nuts or pepita seeds work well too), roughly chopped
Vinaigrette Ingredients
- ½ cup extra virgin olive oil
- ¼ cup white wine vinegar
- 1 tbsp honey
- 1 small shallot, finely chopped
- 1 clove garlic, crushed
- 1 tsp lemon zest
- 1 cup chopped fresh herbs such as oregano, basil, thyme, (or mint/parsley)
- 1 tsp chilli flakes, optional
- Salt & pepper to taste
Method
To make the Vinaigrette, place all ingredients in a jar, and stir well until combined.
Heat a grill on medium heat.
Toss the peach slices and the cherries into a bowl with the olive oil, salt & pepper and grill in batches for a few minutes on each side. Don’t over grill as they will become too soft.
Allow to cool down before assembling the salad.
Place grilled peaches and cherries on a large serving platter. Tear up the bocconcini and scatter throughout the salad, drizzle over the vinegarette and garnish with pistachio’s and plenty of extra herbs.
