Ingredients
- 1 head broccoli (255g florets and stems)
- 4 cups water
- 1 tsp salt flakes
- 1 tbsp toasted sesame oil (or more, to taste)
- toasted white sesame seeds for garnishing
Method
Pistachio and Herb Pesto
Clean and trim the head of broccoli into the florets. Take the stalk and cut into 1 cm batons.
Process until finely chopped. While the motor is running, slowly add the extra virgin olive oil in a thin, steady stream until the mixture is well combined. Season with salt and pepper to taste.
Half fill the Equip KIN. wok with water and bring to a boil, then add the sea salt flakes and the cut broccoli stalk batons and cook for 2-3 minutes or until just tender.
Add in the broccoli florets and the sesame oil and cook for another 2-3 minutes.
Drain the water and set aside to cool.
Serve
Present cool with a sprinkling of toasted sesame seeds to garnish.
